1-Inch thick steaks (New York strips are ideal)
Kosher salt and black pepper
Preheat your gas grill on high heat for 5-10 minutes.
Heavily rub salt & pepper onto both sides of your steak. Keep in mind that around 30-40% of your salt & pepper seasoning will fall off of your steaks while grilling so don’t be afraid to add more than you would think is necessary.
Add your steak to the grill over direct heat so they can sear for 3 minutes. After three minutes is up, flip your steaks and let them sear for an additional 3 minutes. Be sure to use a timer!
Move your steaks to indirect heat for another 3 minutes per side. You’ll end up grilling your steaks for 12 minutes in total for a medium-rare steak that’s juicy inside with a perfect sear on the outside.
Remove from the grill and put a square of butter on top of each steak, serving immediately for best flavor.
Salt & pepper is all you need for outstanding steaks (true story). The simple flavors bring out the best of what’s already present in the steak.
As a rule of thumb, the thicker the steak, the longer you will need to cook it on the indirect side of the grill after the high heat sear — So a 1.5 Inch thick steak would need an additional minute per side over indirect heat.
