Sweet potatoes are paleo-friendly unlike other starchy vegetables because they are low on the glycemic index and contain high amounts of fiber, potassium, vitamins, minerals, and low sodium.
Even though sweet potatoes are starchy vegetables that are high in carbohydrates, the benefits far outweigh any potential negatives. While sweet potatoes do contain sugar (typically a no-no for paleo dieting) and do affect blood sugar levels but the impact is slow and steady on your system.

Serves: 2-4 People
4 Cups of sweet potatoes (about 2 large sweet potatoes)
2 Cloves of garlic, sliced
3 Tablespoons olive oil
1 Tablespoon of balsamic vinegar
1 Teaspoon of rosemary
1 Pinch of thyme
1 Pinch of cinnamon
1 Pinch of salt & black pepper to taste
Preheat your oven to 425 degrees Fahrenheit
Wash your sweet potatoes and peel the skin from the outside
Proceed to chop the sweet potatoes into half-to-quarter inch sized cubes
Mix your sweet potatoes and garlic in a medium-to-large bowl. Proceed to drizzle olive oil over the mixture, add rosemary, thyme and cinnamon and toss to ensure an even coating
Pour into a shallow roasting pan and sprinkle cinnamon over the mixture
Place the sweet potatoes mixture into the oven, turning frequently, until soft and golden brown (typically 30 to 35 minutes)
Remove from oven and drizzle balsamic vinegar; season with salt and pepper
