Serves: 4-6 People
1 Whole chicken (large, approx 6 lbs)
Rotisserie chicken seasoning rub
1 Stick of butter, unsalted
¾ Cup Kosher salt
¼ Cup paprika
¼ Cup onion powder
¼ Cup garlic powder
2 Tablespoons thyme
2 Tablespoons ground pepper
Turn on The Big Easy Oil-less Fryer and allow to preheat while you get the rotisserie chicken ready
Rinse off your rotisserie chicken with water and then pat dry thoroughly
Microwave the stick of butter for about 30 to 45 seconds until the butter is melted. If there are a few small bits remaining, stir until melted
Mix the rotisserie chicken seasoning rub ingredients and the melted stick of butter together in a small bowl (mix them up well!)
Thoroughly rub the butter + seasoning rub mix all over the skin of the rotisserie chicken — Don’t be shy Get in all of the nooks & crannies
Place the rotisserie chicken in The Big Easy roaster basket and then lower it into The Big Easy Oil-less Fryer. Be sure to put the lid on top of The Big Easy!
Cook the rotisserie chicken for 60 to 80 minutes, until the chicken reaches an internal temperature of 165 degrees Fahrenheit (10 minutes per pound is a great rule of thumb with The Big Easy Fryer). Definitely keep a close eye on the chicken after 60 minutes of cooking — You don’t want to end up with overly charred skin!
Remove the rotisserie chicken from The Big Easy and let it rest for 10 to 15 minutes before serving
A great rule of thumb for cooking with The Big Easy Oil-less Fryer is ten minutes cook time per pound of meat
